Celebrate National Dairy Month with a Visit to The Farm!
June is National Dairy Month and three servings a day are what the experts recommend for a healthy, happy body! Traders Point Creamery dairy products also delivers extra nutritional value and taste because they come from 100% organic grass fed cows. We personally invite you to visit the farm this month and see for yourself where our award winning dairy products come from.
There is a lot happening on the farm this month that you surely won’t want to miss! Our calves are getting bigger as they have started eating only grass now, instead of a milk and grass diet. The Creamery production room is bustling with activity as it tries to keep up with demand by adding new machinery to increase productivity. Now is a great time to take a moment to watch and see our dairy products being made. It is really exciting to see this local gem in action. This activity I am sure will make your mouth water with delight and I recommend walking upstairs and getting a sweet treat from our Dairy Bar. The Dairy Bar is open daily from 11am until 6pm serving up scoops of ice cream, old fashioned root beer floats, fresh smoothies, yummy baked goods and even cheese plates! If you happen to be here Wednesday through Saturday be sure
to try fresh organic lunches served 11am until 3pm.
Recipe of the Week
Strawberries with Honey-Sweetened Yogurt Cheese
2 cups of Yogurt Cheese (see below)
6-8 Tablespoons honey
6 cups sliced ripened strawberries
1-3 teaspoons balsamic vinegar
Combine the Yogurt Cheese with 5 tablespoons of honey and whisk together until smooth. In a separate bowl, sprinkle the strawberries with a little balsamic vinegar, then drizzle them with 1-3 tablespoons of honey. The amount of honey and vinegar should be determined by the tartness of the berries. Stir the berries gently with a spoon being sure not to bruise them.
Spoon the berries and their juice into 8 separate serving dishes and top with about ¼ cup of the sweetened Yogurt Cheese.
Yogurt Cheese
2 quarts Traders Point Creamy Whole Milk
Triple thickness Cheesecloth
Line a colander with a layer of damp triple thickness cheesecloth. Put the yogurt into it and stand the colander in a bowl. Cover with plastic wrap and refrigerate for about 20 hours. Drain the liquid from the bowl and discard as much as needed during this process.
If you want an even thicker, denser cheese, pick up the 4 corners of the cheese cloth and twist them together, then put a weight on top of the cheese and let it drain another few hours.
