Green Market

Green Market

New Beverages and Late Spring/Early Summer Produce Rule at Friday's Market

If you haven't yet had a cup of refreshing hibiscus tea or gourmet lemonade from Country Mouse City Mouse, don't wait too long. Both of these lovely summer drinks are original recipes, and will add a new dimension to your shopping experience. If a traditional iced tea is more your speed, Harvest Cafe Coffee is launching their Classic Iced Tea this week that features a malty character and citrus accents.

There will still be some asparagus, but the early summer crops, especially squash and strawberries, are making their debut, and should be in good supply on the tables of several vendors this week. Life Farm will also have plenty of cherry tomatoes and cress, Zen Sheep Farm will have tarragon and oregano, and all your lettuce needs can be met between New Leaf and Seldom Seen Farms.

So shop, chat, linger, savor the summer evening breeze, and feel good knowing that you're supporting local growers who bring you fresh, chemical free produce.

Recipe of the Week

Recipe of the Week

Roasted Beet Salad

serves 4-6

1 lb red beets

2T olive oil

1 bunch scallions sliced on a bias

2 cloves garlic, roasted and smashed

1 cup TPC whole milk yogurt

1 cup balsamic vinegar

4 oz goat cheese

4 oz pine nuts, toasted

8 oz mixed spring greens

Salt and Pepper

Wash beets and place in a baking dish.  Drizzle with olive oil, cover and bake at 375 for 45-50 minutes or until tender.  Remove beets from oven, cool and peel, then dice.  Mix smashed garlic with TPC whole milk yogurt then toss the beets in this mixture.  Season with salt and pepper.  Wash greens and place on plates.  Top with beets, scallions, pine nuts, and crumbled goat cheese.  Place balsamic vinegar in a saucepan and cook on medium heat until the vinegar has reduced to a syrup consistency.  Drizzle the salad with the reduced balsamic.  This can be served as a main dish or smaller portions as a great summer side.
