Grass Fed vs Commercial Beef

Grass Fed vs Commercial Beef

We are honored to have had Chef Joseph Allford of Peterson's Steakhouse put our grass fed beef to the test during his cooking class last week.

Chef Joseph put our 100% grass fed beef up against commercial beef.  The students of the class were all surprised at the naturally deep rich red color and intense depth of flavor our 100% grass fed beef tenderloin had over commercial grain fed beef.  Not only does it taste better, it is also better for you.  Our 100% grass fed beef has a healthful advantage because it is super high in CLA's and Omega-3s.

See for yourself!  Our Farm Store freezer is stocked full of delicious cuts of beef and plenty of ground beef.  We have everything from soup bones to t-bones to rump roasts plus a few appendages for those of you who like that sort of thing!

If you can't make it to our farm store, you can get our ground beef from Joe's Butcher Shop at 111 West Main Street in Carmel or from Good Earth Natural Food Stores at 6350 Guilford Ave. in Broad Ripple.

Recipe of the Week

Recipe of the Week

Miss Gillian's Creamy Cheesy Potato Soup

Ingredients:
1.5 litres of organic broth (any kind)
6 medium Russet potatoes, peeled and quartered
6 medium red potatoes, quartered
4-6 carrots cut into 1/2 in diagonal slices
1/2 bunch of celery, cleaned & cut in same manner (including leaves)
1 bunch of scallions, cleaned & cut
2 Tbsp of olive oil
4-5 cloves of garlic, minced
1-2 onions, sliced
1-2 sprigs of fresh rosemary
2 bay leaves
1/4 C Fleur De La Terre, grated
1 bottle of Traders Point Creamery Whole Milk Yogurt
Fresh chopped parsley
Kosher salt to taste
Black Pepper to taste

Directions:
Put both kinds of potatoes into large pot of water and boil until tender. In the meantime, combine carrots, celery, garlic and onion with olive oil and a pinch of salt in a large soup pot and saute until tender.  Remove red potatoes from boiling water and place in soup pot with the sautéed vegetable mix allowing potatoes to brown and vegetables to carmelize.  Drain Russet potatoes from other pot and set aside.  After the potatoes are browned and vegetables have carmelized, add broth, salt, pepper, bay leaves, and rosemary to pot and simmer covered for 30 minutes.  While soup is simmering, mash Russet potatoes starting with 1 1/2 Cups Whole Milk Yogurt.  Add more yogurt for a thinner consistency if desired.  Next, add Fleur de la Terre to the mashed potatoes.   Then, mix creamy cheesy potatoes into soup pot until thickened.   Again, add more yogurt if you desire a thinner consistency.  Mix in scallions and simmer over medium heat for 5 more minutes stirring frequently.  Serve topped with fresh parsley and enjoy!
