Chouda Naming Contest
Ladies and Gentlemen,
Fons has done it again! We have a brand new hand crafted hard cheese ready for release. (Actually, it has been aging since early last year!) This cheese is a 'Holland meets the United States' variety as it is a cross between a traditional United States cheddar and an aged Holland gouda currently referred to as "chouda". However, we would like our "chouda" to have a great name! So, we are inviting you to help us name our latest creation. If you have any suggestions, email them to info@tpforganics.com. Check next week's newsletter for the winning name and release date. Good luck!
Watch for us on TV!!
On Tuesday, January 22, 2008 Fox 59 WXIN-TV will be broadcasting live from Traders Point Creamery! During their morning show, five different interviews will air from various locations here on the farm. Each interview will highlight a different aspect of what makes us unique. If you have not gotten to visit personally yet, you do not want to miss the show. It will be a great time to see The Loft, The Farm Store and possibly The Milking Parlor. Plus, we'll be talking about everything from our mission and philosophy to when we serve lunch. So, set the DVR for the FOX morning show Tuesday or watch the broadcasts live beginning at 6:50 am. If you still have questions after the show, give us a call, visit our website, or better yet, come visit us live and in person. We hope you'll feel right at
home.

The Green Market
Come join us this Saturday from 9am-12noon for Indiana's only year-round organic farmer's market. You'll get to meet the people who grow the food you eat or make the products you purchase!
Last weekend, you would have met Greg Monzel who came for the first time with wild-crafted herbs and his own brand of tinctures. I am happy to announce that he is planning to come every weekend! I also learned that he is able to create your own brand of tincture for anything from a cut to a headache. So, welcome Greg and thank you all for providing him a hearty Traders Point Creamery welcome!
This weekend, Craig Brown is returning and so is Endangered Species Chocolate! ESC has a new completely organic line of chocolate bars. They have chosen Indy's Best Farmer's Market as one of their marketing sites! (If you are not familiar with this company, I suggest you check out their website at www.chocolatebar.com. As large and far-reaching as they are, they maintain sustainable ideals in everything from their chocolate waste and wrappers to their building site and profits.) Seldom Seen Farms will be back Saturday and so will Mallow Run Winery. The Weston A. Price Foundation with special guest Joe Gady will be here as well.
The list below attempts to name those vendors who are regular, seasonal vendors who have not notified the Market Master of an absence as well as new vendors or those designated as weekly vendors who have requested a position for the weekend. Unfortunately, things can happen that prevent vendors from joining us even after this newsletter is posted on the internet and on our website. We apologize for any inconvenience this may cause!
Lastly, several of our vendors are now able to accept credit cards. Harvest Cafe Coffee Company, Mallow Run Winery and New Day Meadery are able to accept credit. The rest of our vendors accept cash or check only.
These are the vendors who will be here Saturday, January 19:

Rise and Shine
Join us for breakfast every Saturday morning from 9 am-12 noon in the Creamery Loft. If you've gotten used to the usual, we've changed it up a bit for the new year! This weekend, we're serving up Scrambled Eggs, Biscuits, American Fried Potatoes and Bacon on the breakfast buffet. Kids meals are offered at a different price. Oatmeal will now be offered separately of the buffet. (We offer all the toppings like brown sugar, nuts, raisins, and milk to make it delicious!) If you prefer lighter fare for breakfast, the Make-Your-Own Yogurt Parfait Bar, where you add your own fruit and granola to your favorite Traders Point Creamery Yogurt, is available in two sizes-small and large. We have also added organic orange juice! Of course, we heat up our own chocolate milk to make hot chocolate and serve organic coffee and tea as well. Breakfast is served out of the Dairy Bar so milkshakes
and ice cream are available as well.
Lunch in The Loft
Join us for lunch in the Creamery Loft Wednesday-Saturday from 11:30-2pm. We have a unique menu in that we strive to use locally grown or produced, fresh, in season, organic ingredients to create our menu. (Of course, that's true for our breakfasts and dinners, too!)
You'll find your favorites like hamburgers and grilled cheese; but, they are made with 100% grass-fed beef from TPC and our own Fleur de la Terre. The whole menu is available online at www.traderspointcreamery.com. You have to just stop by to see what specials the chef is offering.
The setting of the Creamery Loft also adds to the uniqueness of lunch at Traders Point Creamery. The Creamery Loft is upstairs in our Dairy Barn which is one of several barns on the property. You may be thinking a barn is just a barn; but, our barns are original, refurbished barns from the 1800's that were saved from demolition, purchased and moved here. You can see the original hand hewn marks in the wood and the pegs used to hold it all together. It's a history lesson in and of itself!
So, come on out and spend the day on the farm. You can join us for lunch and the milking, breakfast and a tour, or come for the milking and stay around for dinner. The point is to come join us because we think we have something pretty special to offer whether you are a history buff, a nature buff, or you just enjoy great food!
Dinner by Candle Light in The Loft
Traders Point Creamery serves dinner Friday and Saturday night from 6-9pm. The Loft transforms into a dazzling setting complete with white tablecloths and candle lit tables. Even the menu is unique in that we create our offerings based on seasonal availability and make every effort to purchase local sustainable ingredients that are organic.
In the past, we have offered a price fixed menu where the choice of starter and entree was yours to make for one price. Now, we are offering a full menu of Appetizers, Soup and Salad, and Entrees with each item priced separately. This weekend's menu includes the following:
Appetizers
Traders Point Cheese Plate
Zucchini Fritters
Creamy Mushroom Ragout
Soup and Salad
Traders Point Signature Salad
Roasted Beet Salad
French Onion Soup
Entrees
Oven Roasted Half Chicken
Three Cheese Manicotti
Pan-Seared Strip Steak
Honey Glazed Pork Loin
Recipe of the Week
Garden Herb Fromage Turkey Burgers topped with Caramelized Onions
Ingredients
1 pound ground turkey
4 ounces (plus extra for topping) of Traders Point Garden Herb Fromage
½ cup of whole wheat bread crumbs
½ tsp kosher salt
¼ tsp garlic powder
¼ tsp onion powder
¼ ground pepper
3 TB egg whites (or substitute a whole scrambled egg)
I large onion sliced
1 TB butter
1 TB olive oil
Whole wheat hamburger buns for serving
Place butter and olive oil in a large frying pan over medium high heat. Once the butter is melted, add the sliced onions. Cook onions until edges start to brown about 20 minutes, be sure to keep an eye on them as they will burn easily. It is ok to adjust the heat down to prevent burning.
While the onions are cooking, place the first 7 ingredients in a large bowl and mix well with fork. Spray a separate frying pan with cooking spray and place over medium heat. Form burgers from meat mixture with hands and place in frying pan. (I like to use an ice cream scooper to scoop meat and form into a patty. This helps make sure each patty is about the same size so they will all be finished cooking at the same time) Cook until no longer pink and internal temperature reaches 165 degrees F about 7-12 minutes. Place done burger on hamburger roll and top with caramelized onions and a dollop of fromage.
Eat and Enjoy!
