Margarita Pizza: Artisan Focaccia drizzled with extra virgin olive
oil and roasted garlic, then layered with TPC's own fresh mozzarella,
sweet roma tomatoes, and basil right out of our own garden.
Three Cheese: Artisan Focaccia spread with house made pizza sauce and
loaded with a blend of three cheeses including our own Fleur de la
Terre, then topped with herbed parmesan.
Meat Lovers: Artisan Focaccia loaded with house made pizza sauce,
seasoned grass fed beef, and the Chef's own house made sausage, then
topped with a blend of fresh cheeses.
CLApping for CLA!
CLAs (the common abbreviation for conjugated linoleic acids) are a family of fats found in meat and dairy products. Studies indicate that this fat is good for you! (Maybe someday public health officials will suggest you eat deep-sea fish, olive oil, and whole milk from grass-fed cows.) Meat and dairy products of grass-eating animals (Trader's Point Creamery's Brown Swiss Cows!
) have high levels of CLA! Another reason, aside from the wonderful flavor, to love Trader's Point Creamery products.
CLA was discovered in 1979 by Micheal Pariza, who later commented that it was one of the strongest anti-cancer agent he had seen. In animal studies, very small amounts of CLA have blocked cancer at all stages - a tumor's initial growth, continued growth, and the speading of the cancer cells to other parts of the body (metastasis). Additionally, unlike many cancer preventing agents, CLA appears to work on many different types of cancer tumors. A recent survey determined that women with the most CLA in their diets had a 60 percent reduction in the risk of breast cancer. Well, that might be a good reason to have more Trader's Point Creamery milk and ice cream!
But won't I get fat from consuming all these whole milk products? Well, probably not, and it might even help you lose fat! What - reduce fat by eating fat? Yes! There have been several studies done, and not all reach the same conclusions, but there is growing evidence that a diet rich in CLA may reduce body fat, espcialy abdominal fat, increase lean mass, and prevent weight gain. Of course, whole milk products have more calories than their low-fat or non-fat equivalents, so you will need to account for the additional calories.
Where do you get CLA? Some people take a synthetic version that is widely promoted as a diet aid and muscle builder, but this supplemental CLA may have unwanted side effects. In its natural form, CLA does not appear to have side effects. The most abundant source of natural CLA is the meat and dairy products of grassfed animals (Kangaroo has the highest reported levels of CLA, but we'd suggest sticking a little more local...). Grass-fed animals have 3-5 times more CLA than grain-fed feedlot animals. Simply switching from grainfed to grassfed products can greatly increase your intake of CLA.
Some come on by, pick up some Trader's Point Creamery milk, yogurt, ice cream or grass-fed beef - it tastes good and it's good for you!
Friday Night Dinner - Summer Goodness Just Keeps Comin'
Summer is well under way and our menu is still celebrating the sun. This week we'll have honey-barbeque glazed chicken breasts. The honey is local, the barbeque sauce is made in our kitchen and if the chicken was any fresher, it'd still be walking around! For those preferring a meal without meat, we'll have barbeque tempeh. Garden fresh green beans with sea salt and cracked pepper will accompany the bar-b-que. To continue celebrating the joy of summer, we'll round out the menu with grilled pineapple skewers with mint and mango sauce. Top that off with an artisan whole wheat dinner roll, and you've got a darn good dinner! Come join us!

Trader Point Creamery's Spicy Fromage Recipe Contest Winner!
We have a winner, and what a winner it is: Trader's Point Creamery Spicy Fromage Blanc Linguine and Chicken by Sharon Mosley!
We are excited to announce that we will feature this dish Friday, July 17 as our Dinner On The Deck main entree!
Sharon's Spicy Fromage Blanc Linguine and Chicken is a tasty combo of chicken, linguine, and vegetables brought together in a creamy, Spicy Fromage Blanc sauce. (See the bottom of the newsletter for the Recipe.)
Sharon's love of cooking began by watching her mother cooking from a stool in the kitchen. Sharon asked her mother so many questions about cooking that her mother quipped, "the questions alone [without all the cooking] tired me out!" Sharon's debut as a cook came when her mother was in a car accident and Thanksgiving Dinner needed to be prepared. Sharon (then ten) and her twelve-year-old sister figured out how to put together "turkey with all the trimmings," running upstairs to their mother's room to ask questions and then back down to the kitchen to keep cookin' until everything was perfect. "I fixed my first Thanksgiving Day dinner at ten years old and it was the best Thanksgiving ever!"
Sharon always finds time for cooking favorites like pulled pork, ribs so tender the meat falls off the bones, peach cobbler, and cakes. After all, "when you love doing something, it's not hard." When it comes to cooking, Sharon's motto is "it's always better to have plenty than not enough." Over the years, Sharon has developed expertise with main dishes like fish, lamb, and pork, as well as desserts. Of course, she'll try cooking just about anything.
Not surprisingly, friends and family are always asking Sharon to bring a dish or two to special events or pitch-ins...sometimes occasions are created just so that the creations from Sharon's kitchens may be enjoyed. Sharon doesn't mind - she loves cooking and she's happy to share her food (and award-winning recipes) with her friends and family. They are her biggest fans. Their biggest question: "What is Sharon going to bring next?"

Recipe of the Week - TPC's Spicy Fromage Blanc Linguine and Chicken
SPICY FROMAGE BLANC LINGUINE AND CHICKEN
- 12 oz. Chicken Strips (Sharon uses Tyson Fajita Chicken Strips)
- 1 cup Traders Point Creamery Spicy Fromage Blanc
- 1 tsp. ground mustard
- 1 tbsp. minced garlic
- 4 tbsp. butter or margarine
- 1 cup chicken broth
- 1/2 tsp. black pepper
- 8 oz. linguine
- 2/3 cup aspargus tips
- 1 large Portabella mushroom cap
- 2 fire-roasted red peppers
- Parmesan cheese
- Slice your mushrooms and red peppers into 2 inch lengths by ¼ in. width. In a 12 inch skillet, melt 2 Tbsp. butter or margarine over medium heat. Sauté chicken strips, mushrooms, garlic and red peppers for 4 min. Stir occasionally until thoroughly heated. Then set aside.
- In a small saucepan, under low heat, add the Fromage Blanc, chicken broth, remaining butter or margarine, ground mustard and black pepper. Whisk slowly until well heated.
- In a 6 quart sauce pan, heat 3 quarts water to boiling. Add pasta as directed on box. Add asparagus tips during the last 5 minutes of boiling. When pasta is ready remove the asparagus tips and set aside.
- Drain pasta and pour into large dish. Pour the 12 in skillet containing the sauté mixture over the pasta. Now pour the small saucepan containing the Fromage mixture over the pasta and toss lightly.
- Top the dish with asparagus and sprinkle with parmesan cheese over the entire dish.
Serves four.
