Recipe of the Week
Cheesy Smashed Potatoes (Chef Erika's kids favorite!)
2 lbs baby yukon gold potatoes
1/4 cup sour cream
2 cup shredded chouda cheese
3 TB chopped chives or minced scallions
salt and pepper to taste
Cup potatoes in half and place in pot. Cover potatoes
with water and bring to boil. When water boils add 2 large
pinches of salt; boil 10 minutes more or until tender.
Drain potatoes & return to pot. Mash with sour cream
& cheese. When cheese melts, add chives. Season with
salt and pepper to taste.
This makes a great side dish for any of our 100% grass fed cuts of beef, which are perfect for grilling!
