Recipe of the Week

Recipe of the Week

Fresh paneer (Indian cheese)

2 quarts TPC whole milk
2 Tablespoons white distilled vinegar
1/2 tsp salt
1/2 tsp pepper

Put milk in heavy bottomed sauce pan and bring nearly to a boil, Stirring to avoid scortching. When milk is nearly at a boil, add vinegar, salt and pepper and let milk boil, stirring constantly. Curd will begin to form, boil until no more curd is forming and liquid is no longer solid white. Strain through a cheese cloth and let sit twenty minutes. Crumble cheese and use as desired. I use this to garnish curries.
