Recipe of the Week
GRILLED SUMMER SQUASH AND RED ONIONS WITH CINNAMON CHIPOTLE BUTTER
CHIPOTLE BUTTER
1/4lb unsalted butter,softened
1tsp chipotle puree
1/4tsp cinnamon
1/4tsp salt
fresh lime juice
Cream the butter with the chipotle puree, cinnamon, and salt. Add lime juice, starting with 1/2tsp, then adding more to taste. For a spicier butter, add more chipotle puree. The vegetables will soak up the heat of the butter, so it should be hot but not overpowering.
Enjoy this spicy butter brushed over grilled potatoes, summer squash, and thick rounds of red onions.
Gold and green zucchini, yellow crookneck, and scallop-shaped sunburst and pattypan are a sampling of great summer squash to grill.
They are so easy to prepare. Cut the zucchini or crookneck in half lenghtwise, leaving the stem end on,and score the flesh with a crosshatch design to help it cook more quickly and evenly. If using sunburst or pattypan, cut them through the stem end in thick wedges. Toss the squash with olive oil and chopped garlic and sprinkle liberally with salt and pepper. For easiest grilling, slip the sunburst or pattypan onto skewers. Grill until the flesh softens and marks appear, then turn over and grill the other side.
