Green Market Makes Eating a Joy Again
Think back to the last time you were able to find a Beef Wellington made with grass-fed beef and locally-grown mushrooms, a tamale stuffed with summer-fresh sweet corn and basil, and a wild chanterelle mushroom pie, all in the same place. Never, you say? How about being able to make a dessert choice from among fresh blueberry tarts, a scoop of wild blackberries over organic ice cream, or an organic handmade truffle, enjoyed with a cup of coffee made from organic beans grown high on the Ijen Plateau on the Indonesian island of Java?
Come out to the Green Market on Friday, and these pleasures of the palate can be yours, along with hundreds of other fresh, wholesome food choices. See Feast Catering for the tamales, chanterelles, and blueberry tarts. The Beef Wellington is available for a short time at Daina's Petite Pies. The new organic Java Estate coffee beans are offered by Harvest Cafe Coffee Company.
If you'd rather cook your own gourmet meals, vegetables abound this month. Life Farm, Magnolia Mill Farm, New Leaf Farm, Redwine Farm, and Seldom Seen Farm have you covered from cukes to zukes, and everything in between.
If Friday is rainy or stormy, see us in the Red Barn. Remember, Green Market is never cancelled because of weather.

Recipe of the Week - TPC's Spicy Fromage Blanc Linguine and Chicken
SPICY FROMAGE BLANC LINGUINE AND CHICKEN
- 12 oz. Chicken Strips (Sharon uses Tyson Fajita Chicken Strips)
- 1 cup Traders Point Creamery Spicy Fromage Blanc
- 1 tsp. ground mustard
- 1 tbsp. minced garlic
- 4 tbsp. butter or margarine
- 1 cup chicken broth
- 1/2 tsp. black pepper
- 8 oz. linguine
- 2/3 cup aspargus tips
- 1 large Portabella mushroom cap
- 2 fire-roasted red peppers
- Parmesan cheese
- Slice your mushrooms and red peppers into 2 inch lengths by ¼ in. width. In a 12 inch skillet, melt 2 Tbsp. butter or margarine over medium heat. Sauté chicken strips, mushrooms, garlic and red peppers for 4 min. Stir occasionally until thoroughly heated. Then set aside.
- In a small saucepan, under low heat, add the Fromage Blanc, chicken broth, remaining butter or margarine, ground mustard and black pepper. Whisk slowly until well heated.
- In a 6 quart sauce pan, heat 3 quarts water to boiling. Add pasta as directed on box. Add asparagus tips during the last 5 minutes of boiling. When pasta is ready remove the asparagus tips and set aside.
- Drain pasta and pour into large dish. Pour the 12 in skillet containing the sauté mixture over the pasta. Now pour the small saucepan containing the Fromage mixture over the pasta and toss lightly.
- Top the dish with asparagus and sprinkle with parmesan cheese over the entire dish.
Serves four.
Quote of the Week
Organic isn't just about food. It's a more expansive way of thinking that embraces cyclical, nonlinear resource use, where waste from one activity becomes food for another. It honors natural laws and it abhors the mindless dispersal of toxic chemicals. Cheap substitutes don't work. That's why you can't replace organic farming with chemical farming and expect anything but depleted soil, poor crops, and unstable prices.
